## The story

Michel and Henriette Carrette built the reputation of the house, and Michel won its star in 1999. Their son Jean-Michel, trained at the Poligny hotel school, at La Tour Rose in Lyon and with the Troisgros family, took over in January 2005 after his father's death and has kept the star ever since.

With Amandine Carrette, his partner in the business, he has made the house a reference for responsible hospitality: the Green Star arrived in 2020, and Aux Terrasses now has twenty rooms and suites as well as its restaurant. With a second starred table in town, Tournus is an unusually rewarding stop between Beaune and Mâcon.

## The cooking

The cooking is personal and inventive, anchored in Burgundy but open to wider influences. Carrette works with small local producers, and the menu can change from one service to the next according to what arrives. The wine list favours rare natural wines from Burgundy, the Jura and elsewhere, and an alcohol-free pairing called Botanique is offered alongside the wine pairings.

## Good to know

Tournus is about 45 minutes from Beaune by the A6. The market lunch, from Tuesday to Friday, costs €45 for three courses; in the evening the choice is six courses for €95 or eight for €135. The restaurant is closed on Sunday, Monday and Thursday lunch. Note that the house closes on 18 October 2026 for three months of renovation and plans to reopen around 20 January 2027. Pair a meal with the abbey of Saint-Philibert; with a private driver, the whole table can take the wine pairing.
