## The story

A Burgundian by birth, Chambru trained in Lyon, notably with Stéphane Gaboriau at the Villa Florentine, ran the kitchens of the Moulin de Mougins and spent time in Japan. He won the Meilleur Ouvrier de France title in 2007.

In 2013 he settled in Fuissé and turned a traditional village restaurant into a two-part house, with a gastronomic dining room and a wine bistro. The late 19th-century stone building looks towards the rocks of Solutré and Vergisson, and a small cigar room completes the picture.

## The cooking

The cooking is modern, exact and lightly creative, built on carefully chosen produce and the rhythm of the seasons. Chambru is a keen wine man, and the list runs to more than 700 references, centred on Burgundy and the Beaujolais with Champagne and Alsace in support. A pairing of six glasses is offered with the longer tasting menu.

## Good to know

Fuissé is about 1 hour 10 minutes from Beaune. A market menu costs €39 for two courses or €45 for three, followed by menus at €75, €102 and €130, the last two with an optional six-glass pairing at €66. Opening days vary with the season, so check before booking. Combine lunch with the Roche de Solutré and a tasting in Pouilly-Fuissé; a private driver is the sensible way to enjoy both.
