In spring 2025 he handed over to Laurent Barberot, who had spent four years at the Relais Bernard Loiseau in Saulieu, two at the Auberge de l'Ill with Marc Haeberlin and five with Alain Ducasse at the Plaza Athénée, where he became deputy head chef. Barberot kept the team and the two-part formula: the gastronomic restaurant opens only on Friday evening and Saturday, while the bistro, Bagatelle, which holds a Bib Gourmand, serves the rest of the week. The house also has nineteen rooms. ## The cooking Each dish is built around a single product at its best, often local, with no more than three flavours on the plate. Vegetables frequently open the menu, sauces tie the elements together, and Mediterranean and Japanese touches sit alongside French classics, with Bresse poultry, snails and cheeses from the affineur Marc Janin among the regional anchors. ## Good to know Dole is about 50 minutes from Beaune by the A36. The gastronomic room serves only three meals a week: the Découverte menu at €95 is offered on Friday evening and Saturday lunch, with seven- and nine-course menus at €120 and €160 and wine pairings from €48.
