## The story

La Huchette was founded in the late 1950s by Yolande Gualdieri. Didier Goiffon, trained at the Thonon-les-Bains hotel school, worked at the Oustau de Baumanière, with Pierre Gagnaire and on the Mediterranean coast before becoming chef of the Auberge du Colombier at Roquefort-les-Pins in 1993.

In 2000 the couple opened La Marelle at Péronnas, near Bourg-en-Bresse, which won a star in 2006. They bought La Huchette in 2018, reopened it after renovation in 2019 and earned a star the following year. The house is also a small three-star hotel in the countryside.

## The cooking

Goiffon combines the produce of the Bresse, poultry and guinea fowl above all, with Mediterranean influences from his years in Provence, as in his Bouilla-Bresse, a Bresse answer to bouillabaisse served for at least four. Scallops and blue lobster appear in season. Sandra Goiffon's wine list favours Burgundy and the Mâconnais, with many biodynamic and confidential names.

## Good to know

Replonges is about 1 hour 5 minutes from Beaune, a few minutes from the Mâcon bridges. The three-course Avant Goût menu costs €60 or €66 from Tuesday evening to Friday lunch, followed by menus at €78 and €100. Dinner is served from Tuesday to Saturday, lunch on Friday and Saturday. It pairs well with a day in the Mâconnais vineyards, and a private driver removes any worry about the drive back.
