## The story

Uchimura began in French restaurants in Tokyo before moving to France, where he cooked for Emmanuel Renaut at Flocons de Sel in Megève from 2007 to 2010 and then for Eric Pras at Lameloise in Chagny from 2010 to 2019, two three-star kitchens. The couple settled in Dijon in 2020, calling their restaurant Origine as a tribute to France, their adopted country.

The star arrived in March 2022, two years after opening, in premises on place Wilson that had long been known to Dijon diners as the restaurant of Stéphane Derbord.

## The cooking

The cooking starts from the local terroir and gives vegetables, plants, flowers and mushrooms a central role, with small Japanese inflections in seasoning and technique. Menus change with the chef's inspiration and the market, and the ingredients are firmly regional, from Côte-d'Or beef to saffron grown near Auxonne and Morvan hazelnuts. A fully vegetarian menu is offered alongside the main tasting menus. MICHELIN's inspectors flag the wine list as one of interest.

## Good to know

The official site lists a weekday lunch menu from about 55 euros, with longer tasting menus and a vegetarian menu; dinner is served from Tuesday to Saturday, lunch from Thursday to Saturday, and the restaurant also opens for lunch on the first Sunday of each month. Menus, prices and closing weeks change, so check the website and book directly with the restaurant.
