## History

In 1747 Antoine-Claude Maille opened a boutique in Paris and became a supplier to the court of Louis XV. His family business had begun as a vinegar maker. A Maille shop opened in Burgundy in 1845, and in 1885 Maille was bought by Maurice Grey of Grey-Poupon. Mustard on tap, served from porcelain pumps into stoneware jars, was introduced in 1996. Since 2000 the brand has belonged to Unilever.

## What you will see

Tasting is part of the visit. Guided by the shop's mustard specialists, you can try classic Dijon mustards and unusual flavoured ones side by side, along with vinegars, pickles, oils and dressings. The signature is fresh mustard pumped at the counter into a stoneware jar, and the house is also known for its truffle mustards. A filled jar makes a classic souvenir of Dijon, and the shop also sells gift sets. The fresh mustards on tap belong to the boutique collection and are pumped into stoneware jars made in Burgundy, and if you already own a Maille jar, the shop will refill it. The range has deep roots: when Antoine-Claude Maille sold the business in 1800, it already offered 20 flavours of mustard and 50 vinegars. Today's recipes include a fine Dijon mustard made with Chablis and the truffle mustard served from the pump.

The shop is at 32 rue de la Liberté, the main pedestrian street between Place Darcy and the ducal palace. It opens from Monday to Saturday. The staff speak English. It is an easy stop between the palace and the Halles. Orders can also be placed by phone, for collection at the shop or for delivery by bicycle within 7 kilometres.
