The Moutarderie Fallot is an independent, family-run mustard maker, and its story goes back to 1840. It still grinds mustard seed slowly between stone millstones to protect the flavour. Two visitor tours explain the history of mustard and how it is made today, and both end with a tasting.

## History

The business goes back to 1840, when Léon Bouley founded an oil mill and mustard factory. In 1923 a mustard made with Burgundy verjuice was launched, and in 1928 Edmond Fallot took over the business and gave it new momentum. His son-in-law, Roger Désarménien, joined in 1945 and ran it from 1962. Edmond's grandson, Marc Désarménien, has led the company since 1994.

Mustard has deep roots in the region. The trade in Dijon was regulated as early as 1390, and until the Second World War mustard seed was grown in Burgundy. As that crop disappeared, makers had to buy seed from elsewhere. Fallot and other members of the Moutarde de Bourgogne association launched a programme to revive local growing, and Moutarde de Bourgogne gained protected geographical indication status at the end of 2009.

## What you will see

The Parcours Découvertes, opened in 2003, is a museum-style tour through an old workshop with jars, sieves, winnowing machines and millstones, where you can make your own mustard. The Parcours Sensations Fortes, opened in 2009, follows production live, from the seed silo to the finished jar, with sound and visual effects. Both end with a tasting, and the shop has a mustard bar.

## Planning your visit

Allow about an hour and a quarter for a tour, plus time in the shop. Tours for individuals run at fixed times, in groups of up to 20 or 25 people, and in several languages, including English, so book ahead. The mill is on the rue du Faubourg Bretonnière, a short walk west of the old town.

## Did you know?

Until the Second World War, Burgundy mustard seed was often sown by charcoal burners on their old burning sites in the woods, where the ash had left the soil rich in potash.
