About the restaurant
Bulle d'Osier is a two-Michelin-star restaurant at the Clos Vauban in Langres, a fortified hilltop town in the Haute-Marne about 1 hour 20 minutes north-east of Beaune. Chef Valentin Loison won a first star four months after opening and a second, together with a Green Star, in March 2026. Go for some of the most inventive cooking within reach of Beaune.
The story
The Clos Vauban is the project of Laurent and Martine Petit, who took the Clos des Sens in Annecy to three stars before selling it. They restored a 19th-century mansion by the Porte des Moulins, once an officers' mess, and opened it at the end of 2024 as an eight-room Relais & Châteaux hotel with a bistro, Mirabelle, and the gastronomic Bulle d'Osier.
Valentin Loison, who met Laurent Petit at the Clos des Sens, runs the kitchen, and his partner Anaïs Bercegeay is head sommelier. Their rise has been unusually quick: a star in 2025, three toques from Gault & Millau that autumn, then the second star and the Green Star in 2026.
The cooking
The cooking is creative and firmly rooted in the Haute-Marne: vegetables and herbs from a garden of more than 3,000 square metres, fish from the Saône, plants gathered in meadows and woods, and game from the nearby national forest park. The menu is tailored to each guest at the start of the meal. The dining room, dressed in woven wicker by a local craftswoman, looks onto the open kitchen.

Your driver waits nearby while you dine, up to 3 hours, then drives you home. Nobody has to drive.
Tips for your visit
Langres is about 1 hour 20 minutes from Beaune by the A31. Menus cost €158 for six courses and €198 for eight, and only the longer menu is served on Saturday evening. Dinner is served from Tuesday to Saturday, lunch on Wednesday, Friday and Saturday. Tables are few, so book well ahead. The walk along the ramparts is worth an hour before the meal, and a private driver makes this an easy excursion from Beaune.
