Château du Mont Joly is a one-Michelin-star restaurant with seven rooms in an 18th-century manor at Sampans, just outside Dole and about 45 minutes from Beaune. Romuald Fassenet, Meilleur Ouvrier de France in 2004, has held the star since 2006. Go for inventive cooking grounded in Jura classics, and for a wine list rich in vin jaune.

The story

Fassenet won the Meilleur Ouvrier de France title in 2004 and his first star in 2006 at his restaurant in Dole, before buying Mont Joly in 2007. He is also closely involved with the Bocuse d'Or: he long coached Japan's team, and since 2023 he has been president of Team France, succeeding Serge Vieira.

The house is run as a family affair. Catherine Fassenet, a sommelier distinguished by Gault & Millau, looks after the wine, and the list includes the Château-Chalon made by her sister. The manor stands in a wooded park of two and a half hectares, and each of its seven rooms looks onto the trees.

The cooking

Fassenet's cooking is creative and technically assured, fond of contrasts such as sweet against sharp or smoky against briny, while staying close to the Jura: Bresse poultry with vin jaune and morels, local char, snails, and cheeses selected by the affineur Marc Janin. The wine list centres on the Jura, from savagnin to vin de paille, with support from neighbouring regions.

Tips for your visit

Sampans is about 45 minutes from Beaune. The four-course Mont Joly menu costs €120 and the seasonal tasting menu €165, with pairings of three or five wines; there is also an à la carte choice and a vegetarian menu. The restaurant is closed on Monday and Tuesday and at lunch on Wednesday and Thursday. It is an easy evening out from Beaune with a private driver, and a gentle introduction to the wines of the Jura.
