About the restaurant

La Table du Grapiot is a one-Michelin-star restaurant in Pupillin, a wine village just south of Arbois in the Jura, about 1 hour 15 minutes from Beaune. Chef Vivien Sonzogni and Noémie, who runs the dining room and the wine, won their first star in March 2026, about two years after taking over. Go for playful, precise cooking and a list full of local growers.

The story

Sonzogni, from Besançon, trained at the Poligny hotel school and worked at the Relais Bernard Loiseau, Les Crayères in Reims and the Château de Germigney before heading abroad, to Scotland and then Hong Kong. There he became pastry chef at Caprice, in the Four Seasons, and was named best pastry chef of Hong Kong and Macau in 2018.

Back in Franche-Comté he cooked at Le Parc in Besançon, then took over the Grapiot, already a local institution known for its cellar, with Noémie, a trained sommelier and maître d'hôtel. The star came in the 2026 guide, when the chef was 35.

The cooking

The cooking is refined but light-hearted, built on Franche-Comté produce and unexpected pairings: snails from a nearby farm, Bresse poultry with morels and vin jaune, game with Ploussard, and regional staples such as cancoillotte and gaudes used in new ways. Desserts show the chef's pastry background. The wine list gives priority to the Jura's growers, starting with those of Pupillin itself.
