About the restaurant
L'Écrin de Yohann Chapuis is a one-Michelin-star restaurant in Tournus, a few steps from the abbey of Saint-Philibert and about 45 minutes from Beaune. Chapuis, formerly head chef at Maison Lameloise, won his star here within a year of arriving and has held it since. Go for polished seasonal cooking in a small room of about 25 covers.
The story
Chapuis trained under Daniel Doucet in Charolles, then worked for Pierre Orsi in Lyon and Patrick Henriroux at La Pyramide before becoming head chef at Lameloise, aged 26, in 2004. The aim was to recover the house's third star, and he was in charge of the kitchen when it returned.
In 2008 he took over Greuze in Tournus, an address made famous by Jean Ducloux, and won a star within a year. The gastronomic room is now L'Écrin, while the same house runs a bistro, Le Bouchon Bourguignon. His wife Stéphanie leads the dining room.
The cooking
The cooking is modern and seasonal, with a creative streak resting on the classical discipline of the great Lyon and Burgundy kitchens where Chapuis trained. Regional references, Époisses among them, sit beside seasonal fish, game and vegetables. As well as the set menus there is a short à la carte selection, and the service includes a knowledgeable sommelier.

Tips for your visit
Tournus is about 45 minutes from Beaune. The Instant Surprise menu starts at €85, the Écrin menu costs €130 and the Signature menu €190. The restaurant opens from Thursday evening to Monday and closes on Tuesday and Wednesday. With only about 25 seats, booking is essential. The abbey is a few steps away, and a private driver makes lunch here and an afternoon in the Mâconnais an easy day.
