About the restaurant
Maison Lameloise is a three-Michelin-star restaurant and hotel on the main square of Chagny, about 20 minutes south of Beaune. Éric Pras, Meilleur Ouvrier de France in 2004, has led the kitchen since 2009, cooking the great produce of Burgundy with a light, modern touch. For one memorable dinner on a Côte de Beaune trip, it is the obvious choice.
The story
In 1921 the Lameloise family took over the Hôtel du Commerce, a coaching inn on the old road from Paris to the Mediterranean. Three generations, Pierre, Jean and Jacques Lameloise, ran the kitchen in turn, and the house first appeared among Michelin's starred addresses in 1926.
Éric Pras, who learnt his craft with the Troisgros, Bernard Loiseau and Pierre Gagnaire before becoming Régis Marcon's right hand, joined Jacques Lameloise in 2008 and succeeded him the following year, with Frédéric Lamy, a Chagny native, as director. The restaurant has held three stars without a break since 2007 and remains the benchmark for fine dining in southern Burgundy.
The cooking
Pras builds his menus on the region's staples: snails, Bresse poultry, Charolais beef, freshwater fish and the cheeses of Burgundy and Franche-Comté, each reworked with precision and a measure of invention. Sauces keep a respectful link with the house's classical past without weighing the plate down. The whole table chooses the same menu, which changes almost daily, and every menu can be served with a wine pairing drawn from the appellations that surround Chagny.

Your driver waits nearby while you dine, up to 3 hours, then drives you home. Nobody has to drive.
Tips for your visit
Chagny is about 20 minutes from Beaune. At lunch a shorter menu costs €130, offered to individual bookings outside holidays and events; the longer menus cost €265 and €335. The restaurant is closed on Tuesday and Wednesday, and the last orders are taken at 1 pm and 9 pm. Book several weeks ahead for weekends and the harvest season, and dress smartly. The wine pairing is the natural choice when a private driver is waiting outside, and the house has 16 rooms for those who prefer to stay.
