About the restaurant

La Table de Chaintré is a one-Michelin-star restaurant in Chaintré, a Pouilly-Fuissé village ten minutes south of Mâcon and about 1 hour 10 minutes from Beaune. Sébastien Grospellier cooks a single menu that changes every week, while Floriane Grospellier runs the dining room and the wine. Go for a relaxed, precise meal in the middle of the vineyards.

The story

The Grospelliers run their restaurant in what was once the village grocery, a stone house on the church square looking out over the vines. Sébastien trained at the Poligny hotel school; Floriane, the house sommelier, spends much of her time visiting growers to build the list.

Their approach has stayed simple and personal: a single five-course menu, rewritten each week around the best of the market and the season, served in a small country dining room. The restaurant has held its MICHELIN star since the 2008 guide.

The cooking

The cooking is modern and seasonal, with fish, a choice of meat, cheese or a farmhouse faisselle, and dessert following the week's market. Each Tuesday brings a new menu: the couple buy only wild fish, such as line-caught sea bass, get their meat from the butcher twice a week and drive to Lyon every Tuesday for foie gras, cheese, fruit and vegetables. In season the menu leans on game such as mallard, grouse or hare à la royale, and on truffle in winter. Bread is made in-house from organic flour. The list of about 450 wines concentrates on the region and the rest of France, with a marked interest in biodynamic and natural growers.

Tips for your visit

Chaintré is about 1 hour 10 minutes from Beaune, and Mâcon-Loché TGV station is 3 km away. The restaurant, at 72 Place du Luminaire, serves 20 to 30 guests at most, at lunch and dinner from Wednesday to Saturday and at Sunday lunch. The weekly menu costs €89, wine extra, and on Wednesday, Thursday and Friday lunchtimes a shorter version keeps the appetisers, cheese and desserts with just one starter and one main course. The restaurant is closed on Sunday evening, Monday and Tuesday, and service times can vary, so reserve and confirm. It lies between the Pouilly-Fuissé and Saint-Véran vineyards, and a private driver lets you add a tasting or two either side of the meal.
