Cédric Burtin is a two-Michelin-star restaurant in a former mill at Saint-Rémy, on the edge of Chalon-sur-Saône and about 30 minutes from Beaune. The chef, raised in a family of Charolais cattle breeders, cooks Burgundian produce with an inventive but disciplined hand. It is the natural fine-dining stop on a day in the Côte Chalonnaise.

The story

Burtin began at 15 as an apprentice to Daniel Doucet in Charolles, then worked for Pierre Orsi, Paul Bocuse, La Pyramide in Vienne, Guy Lassausaie and La Rotonde. At 23 he opened his own restaurant in Sennecey-le-Grand and won a star three years later.

In 2010 the restaurant, long known as L'Amaryllis, moved to the Moulin de Martorez, one of thirteen mills that once lined the little River Orbize. One dining room keeps the old milling machinery, the other is a glass veranda above the water. The second star came in 2023, and the house now carries the chef's own name.

The cooking

The kitchen works with Charolais beef, Bresse poultry, shellfish from Brittany and vegetables from its own garden, which has a full-time gardener, with honey from the house's hives. Dishes rely on careful textures and precise combinations rather than showmanship. The menus are called Rouage, the French word for a mill's gearing, and run to five, seven or nine courses; everyone at the table takes the same one. Matthieu Martinache leads the wine service.

    Directly with the restaurant. Weekends, the harvest and the Hospices de Beaune auction in November fill up weeks ahead.

Tips for your visit

Saint-Rémy is about 30 minutes from Beaune. The five-course Rouage is served at lunch from Wednesday to Friday for €95; the seven- and nine-course versions cost €190 and €240, and guests under 35 have their own menu, drinks included, on Wednesday and Thursday evenings. The restaurant is closed from Sunday to Tuesday. Book well ahead. It combines well with an afternoon of tastings in Givry, Mercurey or Rully, and a private driver means everyone can enjoy both the tastings and the pairing.
