About the restaurant
Ed.Em is the one-star restaurant of chef Édouard Mignot and pastry chef Émilie Rey in Chassagne-Montrachet, the village that shares the Montrachet grand cru with Puligny. Refined, seasonal and deeply local, it is the obvious lunch stop on any day devoted to the great white wines of the southern Côte de Beaune.
The story
Édouard Mignot's career took him through the kitchens of the Quai d'Orsay in Paris, Philippe Rochat in Switzerland and Maison Lameloise in Chagny, where he learnt under Eric Pras; Émilie Rey, also a Lameloise alumna, runs the pastry. They opened Ed.Em in Chassagne in 2013 and won a MICHELIN star soon afterwards.
The restaurant came into being with the support of some of the village's leading winegrowers, and it still works closely with local families such as the Colins and the Moreys. The couple have since added a bistro, La Cabane, open from spring to autumn in the village park, and a bakery and pâtisserie, Le Petit Chêne.
The cooking
Mignot says he cooks by feel, according to what the day's produce allows, and the technique never hides the ingredient. Much of it is intensely local: snails from next door, meat and cheese from nearby farms, vegetables from the restaurant's own garden, alongside Charolais beef, Bresse poultry and fish chosen with the local white wines in mind. Émilie Rey's desserts close the meal with finesse. The list runs to some 600 references and draws heavily on the village's own domaines, with sommelier Antonin Gauthrin on hand for pairings.

Tips for your visit
The official site lists a three-course lunch menu from about 45 euros, with longer menus of three, five and seven courses. Note that the restaurant closed temporarily from late April to mid-September 2026, with the team cooking at La Cabane in the meantime, so check the website for current opening days and menus before you book. The dining room, on the first floor of a Burgundian house, seats about 30. Chassagne sits at the southern end of the Côte de Beaune, a short drive from Beaune, and a private driver lets you spend the morning in the cellars, linger over lunch and leave the driving to someone else.
