Domaine William Fèvre farms about 70 hectares in some 90 separate plots across the Chablis vineyard, and calls itself the largest owner of Chablis grands crus. Its tasting room is in the centre of Chablis, on rue Jules Rathier. Since January 2024 the estate has belonged to Domaines Barons de Rothschild (Lafite).

What you will see

In the tasting room, staff guide you through the domaine's range, which runs from Petit Chablis and Chablis to the premiers crus, among them Fourchaume, Montée de Tonnerre, Mont de Milieu, Vaillons and Montmains, and the grands crus Bougros, Les Clos, Les Preuses, Valmur and Vaudésir. Bougros also comes as a separate cuvée, Côte Bouguerots. Visits of the domaine are arranged by appointment through the contact form on its website.

History

The Fèvre family has grown vines in Chablis for about 250 years. In 1959 William Fèvre took over the family estate and gave it his first name and a new impetus. His approach, built on respect for the Chablis terroir, still guides the domaine, which Domaines Barons de Rothschild (Lafite), owners of Château Lafite Rothschild, bought in January 2024.

The estate was an early convert to organic methods, applying them on 50 hectares from 2000, and has farmed all its premiers and grands crus biodynamically since 2010. In 2014 it became the first Chablis domaine certified High Environmental Value, and it aimed to convert the whole vineyard to organic farming by 2025. Didier Séguier directs the domaine and its winemaking. In the cellar, seasoned barrels averaging six years old replace new oak, to keep the freshness and mineral edge of the Kimmeridgian soils.

Tips for your visit

Allow 45 minutes to an hour. The tasting room is at 10 rue Jules Rathier in the centre of Chablis, about 1 hour 30 minutes from Beaune, a short walk from La Chablisienne and the Obédiencerie. It is open from Monday to Saturday all year and on Sundays from March to November, and closes for the holidays from mid-December to early January. Book ahead for a visit of the domaine.
