About the restaurant

Le Charlemagne is a one-star restaurant on the edge of Pernand-Vergelesses, with a panoramic view over the vines to the hill of Corton-Charlemagne, run since 2024 by Beaune-born chef Rudy Villien and his partner Léa Matéos. The cooking marries Burgundian produce with delicate Japanese seasonings, and at lunch the view alone is worth the short drive from Beaune.

The story

Laurent Peugeot opened Le Charlemagne at the start of the 2000s, won a MICHELIN star within a few years and made the house known for Japanese influences he had absorbed while cooking in Japan, well before they were fashionable in Burgundy. After more than two decades he handed it to Rudy Villien, who had taken his first steps in this kitchen at fourteen and returned as Peugeot's second in June 2021.

Villien took over in January 2024, aged 27, and kept the star. Like his predecessor he keeps close to the soil: the restaurant tends a 2,000 square metre kitchen garden of herbs, flowers and heirloom vegetables, composts its waste and bakes its own sourdough bread.

The cooking

Dishes are described in plain terms and then reveal their surprises as you eat: marinades of tamago miso, a zest of combava or kumquat, sharp notes set against comforting Burgundian flavours, applied to poultry, scallops, trout or veal. Desserts come in two registers, one reworking French classics, the other more experimental. The sommeliers work the Burgundy map in depth, from celebrated grands crus to lesser-known village appellations, with a good choice by the glass to match each course.

    Directly with the restaurant. Weekends, the harvest and the Hospices de Beaune auction in November fill up weeks ahead.

    Choose the restaurant on our booking page: pickup at your hotel at the time you like, and a fixed price for the return trip.

    Your driver waits nearby while you dine, up to 3 hours, then drives you home. Nobody has to drive.

Tips for your visit

The official site lists three menus, from about 95 euros for the four-course weekend lunch to a seven-course signature menu; dinner is served on Monday, Thursday and Friday, lunch and dinner at weekends, and the restaurant closes on Tuesday and Wednesday. Check the website for current menus and book ahead, as there are only eleven tables; ask for lunch if you want the view. Dress is smart casual, with trousers required for men, and children are welcome from the age of five. There is a private room for up to 20 and a chef's table in the kitchen. With a private driver, the lanes of Pernand hold no fears after the pairing.
