About the restaurant

Clos du Cèdre is the one-star restaurant of the Hostellerie Cèdre & Spa, a five-star hotel on the boulevard that circles Beaune's ramparts, where Jordan Billan has been head chef since 2019. Come for polished, Burgundy-rooted cooking in the panelled salons of a winegrower's mansion built in 1876, and for one of the deepest wine lists in town.

The story

The hotel occupies a maison de maître vigneron, a winegrower's mansion built in 1876, with period panelling and parquet in the dining rooms and a shaded park behind. It now belongs to the Beauvallon collection and counts 40 rooms and suites, a spa and a second, more relaxed restaurant.

Jordan Billan, the son of Lyonnais restaurateurs, joined the kitchen in 2014 and worked his way through every station before succeeding Christophe Ledru as head chef in 2019. The restaurant won its star in the 2022 guide and holds it in the 2026 selection.

The cooking

Billan calls himself Lyonnais by birth and Burgundian at heart, and his cooking is anchored in the region and its producers, among them a permaculture farm and cattle breeder in Chassagne-Montrachet and an egg farm in Gevrey-Chambertin, with room for creative and occasionally international touches. Menus change with the seasons and include a vegetable menu alongside the tasting menus, with desserts by pastry chef Ivona Geiger. The cellar holds more than 1,000 references and is, unsurprisingly, a tribute to the Burgundy vineyards that begin a few minutes from the door.

    Directly with the restaurant. Weekends, the harvest and the Hospices de Beaune auction in November fill up weeks ahead.

    Choose the restaurant on our booking page: pickup at your hotel at the time you like, and a fixed price for the return trip.

    Your driver waits nearby while you dine, up to 3 hours, then drives you home. Nobody has to drive.

Tips for your visit

The September 2026 menu lists a vegetable menu from about 95 euros, a longer terroir menu and an evening-only tasting menu, plus an à la carte; lunch is served at weekends and dinner from Wednesday to Sunday. Reservation is required and the hotel asks for elegant dress. Check the website for current menus. Guests staying elsewhere will find a private driver the simplest way to enjoy the cellar and return to their hotel, while terrace tables in the park are the ones to request in summer.
