About the restaurant
Le Carmin is Christophe Quéant's one-star restaurant on place Carnot, in the heart of Beaune, a few minutes' walk from the Hôtel-Dieu. The chef cooks clear, seasonal food without artifice in a sixteenth-century house run with his wife Nathalie, and it is one of only two starred restaurants within the town itself.
The story
Quéant grew up in the Oise, the grandson and great-grandson of pastry cooks, and trained at the hotel school of Breuil-le-Vert before cooking for some of the great names of French gastronomy, Joël Robuchon and Alain Ducasse among them. In Burgundy he won a star at Loiseau des Vignes in Beaune and another at the restaurant of the Château de Pommard, where he settled in 2012.
In August 2013 he and Nathalie bought a Henri IV-period house on place Carnot, with its cellar, inner courtyard and an inscription dated 1585 above a top-floor window. After months of renovation Le Carmin opened in October 2014, and the star followed in the 2016 guide.
The cooking
Quéant describes his cooking as instinctive and unadorned: each ingredient is carefully sourced, preferably through short supply chains, then cooked simply so that flavour and texture carry the plate. The menus follow the market and the seasons, with classical touches that reflect his training, and the chef insists that nothing on the plate should be purely decorative. The dining room, dressed in pale tones by Nathalie Quéant, is calm and intimate. The wine list is not published online, so ask the team for Burgundy pairings on the night.

Your driver waits nearby while you dine, up to 3 hours, then drives you home. Nobody has to drive.
Tips for your visit
The official site lists a lunch formula from about 50 euros, served except on public holidays, and tasting menus of four to six courses; the restaurant closes on Sunday, Monday and Tuesday lunchtime. Check the website for current menus and reserve ahead, especially during harvest and the Hospices de Beaune wine auction in November. With a private driver, a lunch here slots neatly into a day of tastings on the Côte de Beaune, and nobody in the party has to drive.
