Domaine Bader-Mimeur makes its wines in the old vat house of the Château de Chassagne-Montrachet. Since 1919 the family has farmed almost all of the château's historic vineyard, a single block of about 5 hectares around the winery. The owners receive small groups by appointment for a tasting, with or without a visit of the cellars.
Visitors are welcomed by the owner-growers themselves. You can choose a visit of the cellars followed by a tasting of five wines, about an hour for €20 per person, or a tasting of five wines alone, about 40 minutes for €15. The range includes the red and white Château de Chassagne-Montrachet from the old château vineyard, and the wines can be bought on the spot at estate prices.
Charles Mimeur's family had owned or worked vines in the Maranges since the 17th century. In 1919 he sold them to buy most of the historic vineyard of the Château de Chassagne-Montrachet, together with part of its buildings, including the large 19th-century vat house. His daughter Élise married Charles Bader, from a Santenay wine family, and together they built up the house of Bader-Mimeur, selling their own wines and trading as négociants, mostly in Paris.
In 1993 Élise's granddaughter Marie-Pierre and her husband Alain Fossier took over. They stopped most of the négociant trade, focused on the family vineyards and began to bottle the whole crop. Since 2020 their children, Nathalie Bernard and Sébastien Fossier, have run the domaine. It now covers 8 hectares in Chassagne-Montrachet, Saint-Aubin premier cru and regional Bourgogne, and every wine spends at least 10 to 12 months in French oak barrels.

The domaine receives visitors from 1 April to 15 November, Monday to Friday, 9:00 to 12:00 and 14:00 to 17:30, by appointment only and for groups of up to 10. Book by e-mail or phone; at busy times in the vineyard the family cannot always say yes. The winery stands on the chemin du Château, beside the Château de Chassagne-Montrachet.
