About the restaurant

La Table d'Hôte is the one-star dining room of La Rôtisserie du Chambertin in Gevrey-Chambertin, run by chef Thomas Collomb and his wife Lucie. It is the Côte de Nuits' only starred table, serving an intimate, largely organic tasting menu in a historic village house a few minutes' walk from the grands crus.

The story

La Rôtisserie du Chambertin occupies eighteenth-century buildings that once belonged to the Jobert de Chambertin family. Pierre and Céline Menneveau founded the restaurant in 1967 and Céline's cooking made it famous; after a period of closure it was restored and reopened in the summer of 2014, with nine bedrooms named after Burgundy vineyard plots, a bistro and a wine bar.

Thomas Collomb, a Dijon native, opened his first restaurant in Nuits-Saint-Georges in 2002 and then ran La Maison des Cariatides in Dijon with Lucie from 2011. Around 2018 they opened the Table d'Hôte, a room of some 25 covers, and it won its MICHELIN star in the 2020 guide.

The cooking

Collomb's convictions are clear: produce that is mostly organic, vegetables that are entirely local, and a menu that changes about every fortnight. The tasting menu reads as a succession of short lists of ingredients, with Burgundy's river fish, poultry and garden produce well represented. The wine list is extensive, with pairings of three or seven glasses, and the house even pours a range of Gevrey-Chambertin premier cru Les Corbeaux vinified with the Trapet and Rossignol-Trapet estates.

Tips for your visit

The official site lists a lunch menu from about 68 euros and a longer dinner menu; the Table d'Hôte serves dinner from Tuesday to Friday and both lunch and dinner on Saturday. Check the website for current menus and times and book ahead, since the room is small. With nine rooms upstairs you can make a night of it, or arrange a private driver so that nobody has to drive after the seven-glass pairing, with Dijon and Nuits-Saint-Georges each within about twenty minutes.
