The Table de Levernois is the one-star restaurant of the Hostellerie de Levernois, a Relais & Châteaux hotel set in a seven-hectare park five kilometres from the centre of Beaune. Chef Philippe Augé, in charge since 2008, cooks the French classics and Burgundy's traditional flavours with produce from the estate's own organic garden.

The story

The hotel occupies an eighteenth-century house in grounds planted with century-old ash, oak and willow and bordered by the little river Bouzaise, with a conservation orchard and beehives among the trees. A 3,500 square metre vegetable garden, run on organic, biodynamic and permaculture lines by a former pastry chef turned market gardener, supplies both of the hotel's restaurants.

Philippe Augé began as chef de partie for Alain Ducasse at the Hôtel de Paris in Monte-Carlo and earned a MICHELIN star in 2001 at the Royal Champagne, another Relais & Châteaux house. He took over the kitchens at Levernois in 2008, and the restaurant keeps its star in the 2026 selection.

The cooking

The menu pays tribute to the French repertoire, with grand classics served alongside dishes shaped by the season and by whatever the kitchen garden yields, and Augé favours short supply chains and local producers. The wine book is the real draw for Burgundy lovers: more than 1,800 references, led by the region's most prestigious bottles and completed by a broad choice from France's other vineyards, with a sommelier team keen to share its local favourites.

    Directly with the restaurant. Weekends, the harvest and the Hospices de Beaune auction in November fill up weeks ahead.

    Your driver waits nearby while you dine, up to 3 hours, then drives you home. Nobody has to drive.

Tips for your visit

Dinner is served every evening and lunch on Sundays, but from early September to the end of June the restaurant closes on Tuesdays and Wednesdays, and it closes for most of January; menu prices are not published online, so check with the hotel when booking and reserve well ahead. The dress code is smart casual: jacket and tie are optional, but gentlemen are asked to wear trousers. Levernois lies on the flat land just south-east of Beaune, and with a private driver you can dine overlooking the park, take the pairing and be back at a hotel in town within ten minutes, or simply stay the night.
