About the restaurant

The Auberge de la Charme is a one-star restaurant in Prenois, a village on the plateau about fifteen minutes north-west of Dijon, run by chefs Nicolas Isnard and David Le Comte with their partner Cécile Sagory. There is no menu to read: guests surrender to a sequence of creative plates in which Burgundian produce meets flavours gathered on the chefs' travels.

The story

The three partners met in the three-star kitchen of Gilles Goujon at Fontjoncouse, in the Corbières, then worked together at the Château de Curzay near Poitiers, where Isnard won a MICHELIN star. In June 2008 they took over this inn, a former village forge built of dressed stone, and earned their first star here only eight months later.

Both chefs come from the south of France, Isnard having trained at hotel schools in Sète and Béziers and Le Comte having grown up in Montélimar. Cécile Sagory, who began as the pastry chef, now runs the dining room and builds the cellar.

The cooking

Burgundy's great ingredients are the starting point, reworked with spices and less familiar ingredients picked up in Asia, the Middle East, North Africa, Spain and Italy, and regional classics are sometimes taken apart and rebuilt. The chefs decide the sequence according to the season and the market, and blackcurrant from Burgundy appears among the sweets. The wine list runs to some 600 references, with plenty of neighbouring Burgundy crus, a notable choice of magnums and a few foreign bottles.

Tips for your visit

The official site lists a three-course lunch from about 65 euros on Thursday, Friday and Saturday, with longer five- and seven-course menus at every service; the restaurant opens from Thursday lunch to Sunday lunch. Check the website for current prices and reserve ahead. The two dining rooms, with beams, old stone, a fireplace and contemporary paintings, are comfortable rather than formal, and there is a private room for small groups. Prenois lies on the plateau beyond Dijon's western suburbs, along quiet country roads, so a private driver lets you enjoy the wine and get back to Dijon or Beaune without a thought for the lanes.
