About the restaurant

L'Aspérule is Keigo Kimura's one-star restaurant on rue Jean-Jacques Rousseau in the centre of Dijon, a room of about 25 seats. The Japanese chef cooks classical French cuisine with a light Japanese hand, and his set lunch is one of the gentlest ways into starred dining in Burgundy.

The story

Kimura learnt his craft in the kitchens of Marc Veyrat, Christopher Coutanceau and Joël Robuchon. The name of his restaurants recalls his four years with Veyrat in the Alps, where the day began with gathering wild herbs: aspérule is sweet woodruff, a woodland plant that smells of cut hay and tonka bean as it dries.

He won the Le Chef magazine Tremplin prize and Gault et Millau's young talent award in 2014, and a first MICHELIN star in 2015 at his original L'Aspérule in Auxerre. The Dijon restaurant opened in 2018 and was starred in the 2019 guide, the year he was also named Côte-d'Or's chef of the year.

The cooking

Expect precise, delicate plates built on fresh seasonal produce, respectful of the codes of French haute cuisine, with a discreet Japanese touch that shows in the balance and clarity of the flavours rather than in any fusion. The wine list runs to some twenty pages and is overwhelmingly Burgundian, from Chablis and the Auxerrois through the Côte de Nuits and Côte de Beaune to the Mâconnais, with a strong selection of grower Champagne and a page of older vintages.

Tips for your visit

The official site lists a lunch menu from about 43 euros, a six-course tasting menu at lunch and dinner and a seven-course version in the evening only; the restaurant opens from Tuesday evening to Saturday. Check the website for current menus and times, and book ahead, as the room is small. With a private driver waiting outside, you can choose from that Burgundy list and still be driven back to your hotel on the Côte without a second thought.
